Friday night was another "cheater's" meal, meaning I used prepared/frozen ingredients.
INGREDIENTS:
1 box Mona's Cheese Stuffed Shells (frozen)
1 jar Prego Traditional pasta sauce
1 package organic baby spinach
Dressing of choice for spinach salad (optional)
Pour half of pasta sauce on bottom of baking dish, arrange frozen pasta shells on top of sauce.
Layer fresh spinach on top of shells, as much as you like.
Pour the rest of the sauce over everything.
Cover dish with foil, bake in 400 degree oven for about an hour. Dish up, top with Parmesan cheese, and serve with spinach salad or steamed veggies.

Have you ever looked into meal prep/assembly services? I used to make a 2 hour drive once a month to a place in Tampa where I would assemble meals that were thrown in our freezer when we got home. It was a fun Mommy's night out, and it provided us with a bunch of meals that were, for the most part, ready to throw in the oven at any time.
There's a billion different franchises out there to suit just about every taste (Super Suppers, Dream Dinners - try googling "meal prep".) It was a great way to feed our family a healthy balanced meal on nights when we had very little prep time and they even suggested what to serve it with - sides AND wine!
